ALL Sausages are made out of Pigs small intestines Nathan. Even American ones. Andouillette is made with what they call Chitterlings in the USA. There’s also cow Tripes in the filler, along with Veal , peppers, wine and onions. So the smell is a bit Tripey. If the smell is actually repugnant then you probably got badly made Andouillette. Best get it in Lyon where they really know what they are doing. It’s not really a Charentaise speciality.

I think you’re being quite unfair to Andouillette here and also …weird.
An andouillette is made out of a pig’s lower intestine, it indisputably smells like shit. Tastes ok, but really, really smells like shit.
